Wife and I are preparing a riff on a pot roast recipe that her mother did for years -- cheap, because not a lot of money came into her family. But it was a wonderful recipe and fed a large family well. We have added a couple of ingredients to it and consider it fine dining: Put 2 tbsp flour into a turkey-sized oven bag and shake to distribute, then put a large chuck roast (3-4 lb) along with two cans of mushroom soup (ideally the sort with garlic included, or add your own garlic if needed) into the bag. If you are garlic hawks, add garlic powder or garlic salt. 2 small cans of drained mushroom pieces and stems. Add salt and pepper and any favorite spices of yours, and a sliced yellow onion (half under, half above the chuck). AND add 3/4 cup dry vermouth or white wine (wife's mother was a pastor's wife and did not use this -- too bad!). Close the bag and pierce it with a knife a few times. Put the bag into a roasting pan and roast in a 275 degree oven for 3 hours. Cut the bag open and drain everything into the pan. Let rest for 10 minutes before slicing. Serve with boiled red potatoes and perhaps green vegetables or a salad -- and of course, a dry red wine. Louis IV never had it so good!
